Delicious Chili

The below is a chili recipe that I have been following for the past year or so.  It's so delicious you will be craving it.  It is perfect for the cold winter nights and any football party.  You can make it as spicy as you want. I deviate a little from the recipe adding more chili powder/garlic powder than called for. This will leave everyone's mouths and tummies very satisfied.

Ingredients


  • 3 lbs lean ground beef (I use less than 3 lbs but you can use 3 if you desire)
  • 1 large chopped onion
  • 1 chopped medium red pepper
  • 2 chopped celery ribs
  • 2 (16 ounce) cans kidney beans, rinsed and drained
  • 1 (29 ounce) can tomato puree
  • 1 (16 ounce) jar salsa 
  • 1 (14 1/2 ounce) can diced tomatoes, undrained (I used Rotel w/ green chilis)
  • 1 can low sodium beef broth
  • 1-2 cup water (I hold off on the water until all ingredients are in to see what the consistency is you don't want it too soupy)
  • 1/4 cup chili powder (I add way more)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dried basil
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder (I add way more and some dashes of garlic salt)
  • 1 teaspoon salt
  • 1 teaspoon coarsely ground pepper
  • shredded cheddar cheese (optional)

Directions:
Saute red pepper, onion, celery and beef together, add to crock pot followed buy the rest of ingredients.  Cook for about an hour or so and serve. Feel free to freeze the left overs.

Toppings:
Dollop of sour cream
Couple of squirts of hot sauce
Sprinkle some cheddar cheese

Asian Chicken Lettuce Wraps

Here is a little recipe I made up on my own.  I want to eat a little healthier and this is a delicious satisfying recipe.

Asian Chicken Lettuce Wrap

Ingredients
1 Red Pepper Diced
1 Carrot Diced
1/2 Bag Bean Sprouts
1 Can diced water chestnuts
1 TBSP Minced Garlic
2-3 breast of Chicken
1 Head Iceburg Lettuce

1/2 tsp cumin
1 tsp garlic powder
1 tsp onion powder

1 bottle Light Asian Sesame Salad Dressing such as Kraft


(you can add however much cumin, garlic powder, and onion powder as you please)

Directions:
Dice and cook the chicken breast in olive oil (I use water to keep chicken moist and drain water and then add EVOO and  veggies). Once chicken is cooked thoroughly add veggies and seasonings, cook until tender. Remove from heat.  While the veggies and chicken are sauteing, rinse head of lettuce and remove the leaves so they are big enough to wrap.

Pour mixture in the lettuce add the dressing and wrap it up and enjoy.  You also can choose to add the dressing to the mixture while it's sauteing, to each their own.

ENJOY
